Not so cruel, duck and goose like to be fed like that. What is cruel is the industrial producers where birds are closed in narrow places, ill and mistreated, but it is the same for chickens, pigs and cows.
The Islamic or Jewish way to slaughter an animal is no more cruel that our old way to kill a pig, and in nature, a predator would not do better. The problem is mass slaughtering and industrial farming. I am for organic agriculture and breeding.
Concerning the foie gras it is one of the oldest practices in the world : Ancient Egyptians did it, like Romans. There is no other reason than the fact it is delicious.
