Peanut butter became one of my favourites after I changed my diet to a healthy one but later I discovered it contains sugar and salt, which I have given up. So I decided to make my own peanut butter without sugar and salt and I made it. It is a lot tastier. At least I make it once a week enough for two or three days. I went online to find information to know how to make it. Online I discovered you can make any nut butter including walnut butter. Yesterday I tried it for the second time. The first time I roasted it too much it became useless. But yesterday I roasted it for a half time, about 5 minute. It became perfect. I mixed it with filtered water, olive oil and small teaspoon natural manuka honey 10+. The same amount of water and olive oil used to 1/3 to the amount of walnut. Walnut seems contains a lot of fat and water.. It becomes like a puree when you machine it. Luckily, the fat is the good one, the healthy type.
Unfortunately all nuts contain oxalates, which are not kidney-friendly. It causes kidney stones. So if you have kiddney problems you may be better off to avoid nuts. For information about oxalates click this link: www.lowoxalate.info
